Hybrid Striped Bass - USA Sport & Food Fish

The Hybrid Striped Bass is a fish of the Moronidae family. A hybrid between the Striped Bass (Morone saxatilis) and the White Bass (Morone chrysops). Other names include Wiper or Whiterock Bass.

Description of the Wiper

While, this is a silver fish with a slightly arched back and two tongue patches near the rear of the tongue. Meanwhile, has broken horizontal stripes on the body.

Generally, between 12 – 22 inches long and weigh 1 – 5 pounds. However, they may reach over 30 inches and 18 pounds.

Habitat of the Hybrid Striped Bass

While, better suited for a culture in ponds than their parent species are. Further, they are more resilient to extremes of temperature and low dissolved oxygen. Generally, inhabit a variety of water types including slow moving streams, large reservoirs, lakes and ponds. While, they may seldom be found in extremely slow areas with dense growth of aquatic weeds. Furthermore, some areas where you can fish for Wiper include Lake Ray Hubbard, Lake Texoma, Lake Tawakoni and Cedar Creek Lake.

Diet and Feeding Behavior

The Hybrid Striped Bass has aggressive feeding habits. Therefore, making them highly sought after by anglers. Further, schooling in the thousands. Furthermore, these fish surface to feed on bait fish such as shad in a concept often referred to as “breaking” the surface. Therefore, making the fish visible and easy to catch on a wide array of lures and baits. Meanwhile, popular lures include spoons, buck-tail jigs, soft-body plastic fish replicas and inline spinners.

While, their diets mainly consist mainly of other fish including shad, bluegill, alewife, sunfish and fathead minnows. As well as, black and white crappie.

Reproduction of the Hybrid Striped Bass

Where, there are two different ways of reproduction. Firstly, some are produced using eggs from the White Bass with sperm from the Striped Bass resulting in the “Sunshine Bass” or “Cherokee Bass”. Secondly, uses the eggs from the Striped Bass female and sperm from the White Bass male, resulting in “Palmetto Bass”.

Purpose and Introduction to the United States

While, they became part of the aquaculture scene in the United States in the 1980s. Meanwhile, currently there are 10 million pounds produced annually. However, they are often introduced in large impoundments to control bait fish populations and provide sport for anglers. Further, they are game fish and food fish.

While, the most common hybridization in hatcheries, is the female striped bass and the male white bass due to the high number of eggs produced by the striped bass female. Generally, the Palmetto Bass produces faster-growing offspring which attain larger size than the Sunshine Bass.

Furthermore, the striped bass female is injected with human gonadotropin which stimulates her to lay eggs. Generally, a dozen or more male white bass are in the tank when spawning occurs. However, once the eggs are fertilized, the brood fish are removed, and the eggs stay adrift in an artificial current for 48 hours to hatch.

Moreover, the current fishing license rules and regulations in Texas allow an angler to take five Striped or Hybrid Striped Bass or a combination thereof on any given day. However, fish must be 18 inches minimum, in either freshwater or saltwater conditions.

Are Wiper Fish Good to Eat

Wiper do not have too many bones with a deliciously firm, white, flaky meat like crappie and white bass. Therefore, making them a sought-after dish on restaurant menus. Moreover, grill with seasoning or fillet them in batter. Generally, steam it with herbs and seasoning and eat with tomato and rice. Therefore, Hybrid Striped Bass can be stuffed and baked whole, headed and gutted. However, when grilling the fish, leave the skin on, as it has a delicate flavor and turns nice and crispy, while the flesh remains moist.

Wiper Recipes

Pan-Fried Hybrid Striped Bass

Ingredients

1 tablespoon all-purpose flour
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon water
1 large egg white
¼ cup seasoned breadcrumbs
2 tablespoons cornmeal
4 (6-ounce) wiper fillets, skinned
2 teaspoons vegetable oil
1 teaspoon butter
4 lemon wedges

Method

Firstly, heat a large non-stick skillet over medium heat. While, combining flour, salt and pepper in a large zip-top plastic bag. Next, in a shallow dish, combine water and egg white by whisking. Subsequently, in another shallow dish, whisk together the breadcrumbs and cornmeal.

After that, place one fish fillet in the bag with flour, seal and shake to coat. Further, dip in egg white mixture and dredge in breadcrumbs. Furthermore, repeat this process with all the fillets. In short, first flour, then egg and complete with breadcrumbs.

Meanwhile, in a pan add vegetable oil and butter and heat until the butter melts. Next, add the fillets to the pan and cook on each side for approximately 5 minutes, or until the fish flakes easily with a fork. Moreover, serve hot with lemon wedges.

Filleting Wiper

Firstly, rinse the fish under cold water to remove any loose debris. Secondly, cut next to the pectoral fin down the length of the gill plate to the backbone with a filleting knife. Further, cut along the dorsal fin of the fish, from the head toward the tail, holding the blade edge tight against the backbone.

Now, just after the rib cage, behind the vent, use the curved point and slide the knife through until the knife cuts both sides of the fish until almost at the tail. Meanwhile, with a gentle pull slice the flesh away from the rib cage. Moreover, the flesh part of the fish fillet is now attached by the piece on the tail only.

Now, simply make and incision at the top of the flesh by the tail side and slide the knife down next to the skin. Therefore, removing the skin from the flesh and giving you a nice fillet. Next, turn the fish over and remove the fillet from the other side of the fish. Therefore, giving you two beautiful fillets of fish. Subsequently, discard the bones and carcass of the fish. Now, rinse the fillets until they are clean. Furthermore, another suggestion, to add to the flavor of the fillet, remove all the red meat from the fillet, using only the white meat. Therefore, making a tastier fillet.

Some useful tips

Furthermore, to keep that fresh taste without freezing for a few days before cooking. Generally, wash the fillets well and place them in a sealable refrigerator bag, place the bag in a bowl and cover the fillets with water. Afterward, fill the bowl with ice cubes completely covering the bag with ice. Next, place it in the refrigerator, replacing the ice as it melts. Moreover, keep the fillets as cold as possible without freezing them. However, keep in mind that the fillets can still spoil, so clean them again and cook them within a few days.
